Ingredients:


  • 4 veal cutlets, about 6 ounces each

  • 1 cup breadcrumbs

Instructions:


  1. Pound the veal cutlets to a thickness of about 1/4 inch.

  2. In a shallow dish, combine the flour, salt, and pepper.

  3. In a separate shallow dish, whisk together the eggs and milk.

  4. In a third shallow dish, place the breadcrumbs.

  5. Dredge each veal cutlet in the flour, then dip it in the egg mixture and finally coat it in the breadcrumbs, making sure to coat it evenly.

  6. Heat the vegetable oil in a large skillet over medium-high heat until it is shimmering.

  7. Carefully place the breaded veal cutlets in the hot oil and fry for 2-3 minutes per side, or until golden brown.

  8. Drain the schnitzels on paper towels.

  9. Serve immediately with lemon slices and your favorite side dish, such as potato salad or French fries.


Tips:


  • For a richer flavor, use veal scallopini instead of veal cutlets.

  • If you don't have veal, you can use chicken or pork instead.
