Couscous: Algeria's national dish, a delight for the palate

Ingredients:


  • 1 cup couscous

  • 2 cups chicken broth

  • 1/2 cup olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon ground turmeric

  • 1/2 cup chopped cilantro

  • 1/2 cup raisins


Instructions:


  1. In a large bowl, combine the couscous and chicken broth. Let stand for 20 minutes, or until the couscous absorbs all the liquid.

  2. While the couscous is soaking, heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

  3. Add the garlic and cook for 1 minute more.

  4. Add the chicken, salt, pepper, cumin, and turmeric. Cook until the chicken is browned on all sides, about 10 minutes.

  5. Stir in the cilantro and raisins.

  6. Fluff the couscous with a fork.

  7. Serve the couscous with the chicken and vegetables.


Tips:


  • For a richer flavor, you can use bone-in, skin-on chicken breasts.

  • If you don't have cilantro, you can use parsley instead.

  • You can also add other vegetables to couscous, such as carrots, celery, or peas.
